i don't think that there's need of real organization right now, because
there's no real income.
charity can be a trust or fund, non-commercial organization and it
depends on country law, where it is registered, especially taxes.
that's not an issue, if you sell it through services, because they pay
those taxes.

me personnaly i don't think i can do it, even if i want it, because i'm
also doing non-musical-stuff that i believe is more imortant for people.
i'm providing ideas for many cases.
usually international companies works through off-shores, because of
taxes, but you'll need to have a representative there. and the first
money spending is to open-up bank account and usually registering an org
is also costs money.
the very first of that is to write founding charter, i was translating
one of mageia, you'll need to vote on who's main, elect attendant - all
this depends on the country where it is started. laws differs very much
around the world. Thailand maybe? /i don't think this can be done easily
(for me at least)/

look for who's github needs https://github.com/about/jobs - git is OSS
http://www.openstack.org/foundation/ - about foundation as a type
https://www.openstack.org/brand/openstack-trademark-policy/
registering trademark also depends on country, i don't know how to
register around the globe and i don't think it is needed yet.

to get on itunes it's better have a label (i think so), because this is
what most of musicians is looking for, simple way to try is through
affiliates like reverb, but i remember there was some other services
that proposed lower %. Google don't needs it. also with registered label
you can get on other services, but this also means responsibility on the
content and contracts with artists for their authority on work, etc.
(there can be fakes or plagiary, that is hard to recognize, that's why i
propose to get in a studio-like way, you'll be sure at least that all is
done in unique way)

reverb cost on itunes posting is 20$ for each release
google is a 25$ one time

i think that google provides more audience and i don't care on how much
they can pay.
itunes is more charged audience, they got some special devices and if it
is alright - then get them both.

=============

what i propose is just to open google.music account.
but yes, you are right that having monetization means that you'll need
to get an org if this gonna be more than 500 and also needs more work
with artists, some kind of agreement.
