We use a centralized system here for hundreds of windows (samba) and
macintosh (netatalk) computers.  We do accounting into a mySQL database.
This system has been running non-stop for over a year now with the only
downtime being for software upgrades to samba, netatalk, and lprng.

On our printers, we only have the tcp/ip protocol active, and we use the
access control list feature to only accept packets from two machines: the
print server and a backup print server.  We have never used the backup
print server, but it seemed wise to put a second ip address in the list so
we can still manage the printers if there are problems with the primary
print server.

I haven't seen any real disadvantages to our centralized print server
setup, at least in the way which we use it.
