I have done precisely this with an 802.11b bridge.
What I shall need to do therefore is get my AP to act as the DHCP server
and the LTSP server

I used a dual nic LTSP server with one side on the AP's subnet. I let
the LTSP server do the DHCP for my LTSP clients on that subnet. The
AP's DHCP handled other DHCP requests. That arrangement worked fine
for me.

Can you tell me whether your main AP is a bridge or a router? Mine is a
router
and so it doesn't forward broadcast traffic and so the DHCP request
never reaches
the LTSP server.
If your LTSP client connected through the 802.11b bridge broadcasts a
DHCP request
I presume that the DHCPOFFER comes from the AP. How do you pass the
required
parameters in that case or have I misunderstood your setup?
