I say:

Unknown interface? Is your interface even coming up with 'ifconfig' ? If not, 
it sounds like a driver issue with your NIC. Check /var/log/dmesg for clues if 
it's not coming up. If it does come up, use /etc/network/interfaces to 
configure your NICs, not network-manager (s/manager/damager). I've simply had 
too many issues with Network Manager and LTSP in the past (just my humble 
opinion though).

Also check /etc/default/dhcp3-server to make sure it's listening on the right 
interface.

Also 'grep dhcp /var/log/daemon.log' for clues. It might have more info than 
what it's telling you on the terminal.
