Install ubuntu-desktop and that should pull all of the applications down 
that you want (default Gnome install with apps). AFAIK, anyway.

There's nothing wrong with doing that, in fact you *need* all of these 
apps on the server if the LTSP clients are going to use them. The kernel 
and the apps are separated - I normally install the server kernel image 
on the server (whether i386 or AMD64) which is definitely a good idea - 
the LTSP chroot (for the clients) will still have the i386 kernel 
installed, obviously.

Not sure about "integrating well with the gui" but it's a good idea 
since the server kernel gives you access to > 3GB RAM (if you have more 
than that in your server) as well as other optimizations.
