    Hello Julien:
   First idea: If you have access to a sensitive balance and the material
   from which the rosette is made, weigh a circle of the uncut material
   the same diameter as the rosette and compare it to the weight of the
   finished rosette. That would give a good approximation of the voids. It
   would be more accurate if the rosette were weighed before any purely
   decorative carving was done.
   Second idea:  It should be possible to rig up a light box with a
   photographic light meter to measure the amount of light passing through
   the rosette (unless the rosette material itself transmits light).
