Dear Daniel,
It might be possible that you press the strings too much. Using "light
touch" shouldn't produce any noise except natural gut sqeaking which is
very gentle normally. Oiling may dimnish the problem, but unfortunately
oiled string won't sound as bright as it could without the treatment.
Obviously washing hands before playing is very important too.

Are you talking about squeaking, or an unwanted sounding of the open
string pitch, or something else?
I've never had the latter problem, but I live in a relatively dry
climate. Squeaking varies with the style of string, I've found.
Is it possible your hands perspire a lot?
Are you using polished gut?
