Gut strings make noise from the left hand, and this is very 
noticeable during recordings.
All early instruments make noises like this, like our 17th century 
organ makes clicking key noises. It is part of the sound.
You can rub the string with a walnut, as the treatises advise, but I 
would recommend you enjoy the sound
If you are getting actual notes, then there is something that has to 
do with the finger roll on and off.
Roll on, roll off for quiet; place on, roll off for speed. There is 
also a technique for placing the fingers with a sideways roll for all shifts.
