A huge portion of my company even is based on our podcast, so, needless to
say, I'm not happy about this, putting it mildly.
Here's what I say to do: I've found that this tactic generally works with
things like this.
We all contact Apple Accessibility. Tell them, ok. We accept these new
conditions, however, there's a catch. Since they're gonna make us pay by
having artwork, which means we have to pay to have someone sighted create it
for us since we can't see to do it ourselves, we now expect Apple upon
request to create the artwork for us, and have it ready within 24 hours from
the time of request.
Yeah, lettem chew on that! for a few minutes! I guarantee if enough people
tell them we're gonna expect them then to make the artwork for us, since we
can't, they'll get so d*** tired of hearing it, they'll hopefully
reconsider. Maybe not willingly, but they hopefully will, none the less.

iTunes has been completely redesigned and there are new requirements for
podcast cover art. To be eligible for featuring on iTunes Store, a podcast
must have 1400 x 1400 pixel cover art in JPG or PNG format using RGB color
space. The image URL must end in ".jpg", ".jpeg" or ".png" and the server
hosting the image must allow HTTP HEAD requests. See our technical spec

Server Configuration Requirement
Podcast streaming playback on iTunes requires all hosting servers to
