Ubuntu on a USB drive will use FAT32 by design.
I use "Universal USB, and it will burn many types of ISO's onto USB.
Here's the link, I don't know if they have a Mac version of the installer.

Not sure.  Normally, Linux requires it's own type of file system.  Usually,
I think you need a swap partition as well.  I tell you what, I dono how much
help I can be, but if you send me off list the page that describes the
process to do this, I'll see if I can figure out where you may a gone wrong.
Being we're kind a dealing more though with Linux than with the Apple side
of things, this is veering a bit off topic for the list.  I'd be happy as I
said though to try off list giving you a hand with this.  Not sure how much
help I'll be, but I'm willing to at least try.
