If your just looking for a system that works look no futher than your 7600 :).

Using a couple of utilities, available from:

You can install anyrthing up to OS X 10.2.6 on a 7600. I have a 7300 with a 300MHz 
Sonnet G3 upgrade and a Rage 128 PCI card in and it runs very well, all things 
considered.

If you insist on buying a G3 then make sure you get either a Rev. 2 B&W (major IDE 
issue - i have the hard disk damage from a Rev. 1 to prove it!) or a Rev. C Beige G3 
(erm... another IDE issue!! Slave drives this time i believe). Look on 
<http://www.xlr8yourmac.com> for more detials.

B&W is 'New World' so it will run Panther should you decide to go totally nutz, but it 
won't run it well, whereas current pointers say Panther won't run on 'Old World' (read 
Beige) hardware.
