I've been doing a little java development under XCode, but I've not really been using many of it's features. I edit my code with Vim, and just use the IDE for compiling and launching. The project creation side of things hasn't been all that intuitive - I found XCode much more useful for Cocoa+Objective C than I have for java. (as an aside, I highly recommend Aaron Hillegass's 'Cocoa Programming for Mac OS X' for anyone interested in Mac OS X application development)
Whenever I'm working in Python or C++ I just use Vim, Terminal.app and makefiles.
