I'm seeing exactly the same thing here in exactly the same situation.
I have MacFUSE 0.4.0 and sshfs 0.3.0 and I'm getting trailing garbage
when I'm editing my makefiles. This is most likely a regression from
the last version of MacFUSE, as in a month of working with MacFUSE
0.3.0 daily, I never saw this issue. I'm connecting to a Solaris 10
box running:

ssh -v (on the Solaris side)
Sun_SSH_1.1, SSH protocols 1.5/2.0, OpenSSL 0x0090704f

uname -a (on the Solaris side)
SunOS blade2.cs.umr.edu 5.10 Generic_118833-24 sun4u sparc SUNW,Sun-
Blade-100

kextstat | grep fuse (on the OS X side)
  115    0 0x4e66f000 0x10000    0xf000
com.google.filesystems.fusefs (0.4.0) <6 5 4 3 2>

uname -a (on the OS X side)
Darwin r01cscecl.desktop.umr.edu 8.10.1 Darwin Kernel Version 8.10.1:
Wed May 23 16:33:00 PDT 2007; root:xnu-792.22.5~1/RELEASE_I386 i386
i386

There is no concurrent modification or file-access occurring.
