I don't really get it. This thread mentions this problem in the third posting, and that it can all be solved by upgrading to unofficial MacFUSE 2.2 release, after which uninstalling should work fine.
Didn't you read the entire thread? Or didn't this advice work out for you?

Also, there is no MacFUSE 2.3 AFAIK, even unofficially. OSXFUSE 2.3 exists, but no MacFUSE 2.3.
