Hello Dan,

You might consider using VueScan (an app that gets many antique SCSI 
based scanners working again in OS-X).

If your scanner is not supported, drop the developer a note, the next 
release usually has support for it (and he is very prolific, sometimes 
releasing four or five updates a week --- adding features and 
supporting more scanners). It is a shareware program, but is waaaay 
more powerful than the software that came with many scanners when they 
were "brand spanking new".

If you want to roll your own app, then SANE might work for you:

Someday, I will come up with a clever signature line. I am not sure if
