I think your best (and truest) argument is that the graphic design world is 
still overwhelmingly Mac based, so if your print business is going to be 
dealing with graphic designers (and what printer doesn't?) or publications or 
advertising dept. art agencies, chances are very good that many, if not most, 
of them are going to be working on Macs and sending files that are 
Mac-formatted and that use Macintosh fonts, etc., etc.

I would think it would be just a plain poor business decision for _any_ printer 
not to retain a fair amount of Mac compatibility.
