The question was....
If Option+Eject now opens my first optical drive door, how can the same
command also open the second optical drive door if I was to add one?

I read the tech article link, and it says the same thing that you said, that
pressing Option+Eject will open the second drive door.

But that did not answer my question of whether both drive doors would slide
open when Option+Eject is pressed.

So I will surmise an answer....
Although both Eject and Option+Eject open the drive door if you have one
drive, adding a second drive makes Option+Eject only open the second drive
door.
