Hi,
We are putting Mac Mini's into lecture theatres and the power switch
is not really accessible. Does anyone know of any remote, or usb power
on/off solutions for Mac?

Not sure if they still make it, but Sophisticated Circuits' Kick Off
would be worth looking at:
http://www.sophisticated.com/products/kick-off/kick-off_osx.html
It would allow you to shut down the machine then cut the power to it.
Once you return power, it will start it up, even if it was cleanly shut
down.
