Instead of a full power off I'd set them to sleep:
osascript -e 'tell application "System Events" to sleep'
Then, you can wake the thing over the network:
wakeonlan <machine's MAC address>
You can find wakeonlan in the depths of the net.
In case you don't have a network at all, put one there. Wiring up
Ethernet gives you many more capabilities than just flipping the
power switch, e.g. update of the hard disk's contents, system
upgrades and similar.
The low end solution would be to open these Mac Minis to put a longer
wire on the exisiting power switch. Two switches in parallel won't
hurt either.
