My ideal would be to use the iMac screen, use the iMac disk as extra
storage (if possible) and connect it to the Mini.
Obviously, Screen sharing is one way to do this, but it's kludgy and
doesn't really work quite as well.

Ah, unfortunately your question really is, "is there a way to use an
OLD iMac as a monitor for another Mac."
The newest models of iMac have precisely the feature you want: a video
input connector. But it doesn't help you. :-(
