Yes, I'm now following the directions given in HT204306 (hold down Home button; connect to Mac; wait for Recovery screen).
It took about 20 minutes of holding down the Home button before the Restore screen appeared, but it did! And now, after clicking about half a dozen Restore buttons, iTunes actually seems to be working on the restore...
