I have some experience with a comparable product, my music interval practice application, Clarion: http://www.red-sweater.com/clarion/ I wasn't selling it for long before I realized not only is this true, but the odds of a professor assigning for purchase any application that is not cross-platform for Mac/PC is almost zero. It's getting to the point now however, where iPhones may be getting so ubiquitous among college-age kids, that a professor could at least "strongly recommend" the purchase of an iPhone app that is conducive to a class. So in summary, if I was going to try targeting the formal higher education market again, I would probably aim for the iPhone first, or else plan from the start to have a cross-platform desktop solution.
