I could boot into X from:
Knoppix: http://knopper.net/knoppix/index-en.html
and the Gentoo live cd: http://gentoo.inode.at/releases/x86/2006.1/livecd/ on my Macbook Pro. I don't think there should be any problem with a Mac Mini. You can probably run it in full resolution.

I use a 1 gig "mini mac" core duo, and develop/run JayOS on it. Only
nneed to reboot into OS X to burn bootable HFS CDs, but that's only a
temporary condition :)
Note that JayOS does not completely support the PowerPC, but works
great on the Intel Macs and regular x86 processors.
