You can! Just have a look at the first linux images available for macintel, on macintel.. It used efi, and elilo to boot up. IIRC.
Alternatively, you can build a bootable efi/elilo linux usbkey/cdrom by yourself. That's part of the beauty of opensource, you have all the code/tools needed to do it by yourself, it just takes: time, pacience and willpower.
