1. Opne System Preferences, choose "users and groups", and find your account in 
the table.
2. Click the "login times" tab and go to the table of applications
3. Check the box for each one you do not want to start.

Note, too, that your Mac will probably launch all programs you had open when 
you shut down. You can change this behavior in, I believe, the General settings 
of System Preferences.
