As mentioned, the Mac re-opens the apps you had open when you shut down. You 
can change this in System Preferences if you want to. I like it, since there is 
a set of programs I would always have to open anyway, as they stay open all the 
time; this way I just boot up, and whatever I was doing is back. It's a 
personal preference.
