Tables are actually more professional formatting tools; more professional than 
tabs which were work arounds from the type writer days when tables as we know 
them didn't exist.

Anyway, there's always a learning curve when you use a new OS or new software. 
I bet you didn't just open Word for the first time and instinctively knew how 
everything worked. You, like most of us, probably used Word over many years and 
gradually learnt more and more features, so by the time you switch to Pages 
there's a lot you've come to expect from a word processor, and of course it's 
going to take time to learn how to do all those things in a new application.

Using a simple word processor to write instead of format is a good idea. LaTex 
is one that might be perfect for you, though I haven't got into it yet. The one 
I like is Scrivener, and it has a free trial as well. It's no good for 
formatting, but great for writing.
