The Ethernet adaptor should indeed “Just work” when connected. Go to System Preferences, Network. Look at the Services list. How does it look? The adaptor (Thunderbolt or USB) should show as connected. If it doesn’t, then what does it show? There’s an explanatory message just under the table when the adaptor is selected.
