1, Big Sur is fine. Some have reported that dismissing notifications are hard, but I haven’t ran into this issue. 2nd, you can send from alias’s just fine from IOS, I have been doing it since IOS 10. What you have to do is, double tap on the from field twice, the 1st time the VoiceOver cursor will jumpp back to the to field, just swipe back to the from field, double tap on the from address again, and then you will get a pop up of choices of email addresses to send from. Also make sure that your alias is registered under your appleID as a contact point, if not it may not appear in the list of send from emails. HTH
