I share this same experience.
For several things google, Chrome does a far far more better job than Safari
Google sheets and slides in particular as well as gemini.
But for many other web apps or sites Safari gives a better performance.
One big problem with Chrome though is that you always have to interact with 
text to do select copy.  In safari it is much more natural.
