I have external hard drives that I use with my windows laptop, now. Can I connect these to my new Mac?

If they're formatted with FAT32 or ExFAT, the mac should be able to read them. If they're formatted with NTFS (the Windows file system), you can only read them with third-party software. Your best option in that case would be to connect them to a Windows machine and then access the data remotely from the Mac so you can copy it. Both macOS and Windows support Microsoft's Server message Block (SMB) protocol, which allows files to be accessed remotely.
