Hi,

Do a search on "iphone users guide".  It will be there as the first item in 
your results.  You can download that pdf to your Mac and more easily access 
what you need.  Easily download it by just pressing Option-return on the link 
after Interacting with that first search result.  The VoiceOver stuff is in the 
latter part of the document starting around page 115 in the Accessibility 
section.  Lots of good stuff in here that many of us should read to use our 
iPhones and other iOS devices to the fullest.
