In usual scenarios where email is collected on a paper form along with other
data, nobody will do that, as it is totally impractical in case where the
data HAS to be collected on paper and legally confirmed by a person's
SIGNATURE (!!!) on that paper form anyway.

Using a "connected device" to sign contracts "in the field" would require
the field agent doing it to carry a printer with themselves, to print the
contract after the data has been collected and have the customer sign it. 
It also makes the process dependent on presence of Internet connection which
may or may not be available at that particular place (yes, there are still
places without cellular coverage, and also failures happen).

I really have a feeling that some people never go out of the server room ;).
