Hmmm, I have a Apple LW 4/600 and I use an Farallon EtherMac iPrint adapter to connect my localtalk printer to my ethernet network. It routes the Appletalk over ethernet. Then I use my OS X mac to share the printer to Windows clients.
So this works, are you trying to remove the OS X machine from the data flow, or are you looking to add Linux clients?
I have a Linux server and tried setting up netatalk to find the printer and share it via CUPS/Samba but was unsuccessful after much work.
If you have netatalk installed, you should be able to see AppleTalk printers on your network with this command
nbplkup :LaserWriter
Your printer should show up in the listing.
The problem I see is that CUPS on my Linux boxes don't know about PAP. The Mac OS X version of CUPS can use PAP to talk to printers, but Apple paid money to EasySoftware, so that functionality may not be available in the CUPS versions used by Linux distributions.
netatalk can be configured to work with lpr/lpd printing, but CUPS is a different animal. You might want to try LPRng instead of CUPS and use the information at

I tried sharing the PAP printers I have configured on my OS X machine, and CUPS running on Fedora Core 1 picked them up off the network (IPP) and let me print.
