I'm not really interested in putting in a turbo, and would more interested
in tuning up the current engine. I've got a basic knowledge of engines, but
am not a real expert, hence the request for ideas.

Well there's any number of things you can do to speed a 260Z up, so a 
good way to start would be to set a budget and direction for the 
upgrades.  Can you get insurance for a turbo? If so, a late-model 
twincam swap (ie RB20 etc) would probably be the best value-for-money. 
 Would you rather develop a highly tuned naturally aspirated engine?  If 
so you can look into the traditional stuff, ie camshaft, carburettors, 
compression ratio, diff ratio, manual transmission etc....
