probably a dumb thought, you said the shop you took it to was good - maybe
they used a slightly different head gasket and one of the coolant veins is
covered by gasket where it shouldnt be and has cut off water circulation. I
know sometimes, even if you get a good mechanic, the gaskets might be cut
wrong and the can (very rarely) partially or completely cover up an apature
that otherwise should be open to let cooland flow though.

aside from that, have you checked your water pump? It would be funny for it
to just go out at this specific time, but stranger things have happened.
