There have been a number of requests for this.  I would certainly find it
very useful.

At the moment, there are two options:
1)   Go into the recurrence dialog and change the date there
2)   Add a sub-task with the same name.   It will be this task that appears
in the To Do list and you can then change the date on this.  When you
complete the task, you have to untick the Due Date box on the child task,
and then mark both the child and the parent as done.   The child will then
inherit the new date that is assigned by the recurrence algorithm for the
parent
