I agree - It seems to me that there are two types of recurring tasks - those 
where you do the same thing every time (or you pick the next thing from the 
fixed list of things you do everytime) and those - eg "Catch up with admin 
work" where the list of things to be worked on under that recurring task are 
ad hoc and once complete you don't want them to recur.
 
I can sort of see the arguement that say these are something different (it 
keeps the options down) but has been pointed out with something like 'Close 
office' example you quite often get a mixture of regular and ad hoc.
 
At the moment because neither the recurring task functionality nor the 
atlternative complete function quite work for me, I end up doing something 
pretty close to what you specify in your final paragraph (before the ++++ 
signs).    One way or the other, it would be nice to have some additional 
support for these recurring tasks where what you do each time is 
different.   I have a lot of these.
 
On the catching up front,  I use the "skip all occurrences up to today"   
all the time because a) I often fall behind with stuff; and b) if I have 
missed a task I don't want to be reminded that I also missed several 
intermediate instances of that task as well.     I could put the request the 
other way (perhaps make it a global option),  'When marking a recurring task 
complete, skip any other intermeidate occurrences up to today".  
 
And incidentally, something else I have requested and which did get support 
at the time, can the existing 'Skip all ocurrence up to day',  alway skip to 
the next date/time in the future.
