I do something very similar to what you do, John, because I find it easier to manage than a long list of little steps to complete an activity. My syntax for the task description is: <Desired outcome> - <next step>
Examples might be "paint spare bedroom - buy paint", or "new spreadsheet tool - arrange planning meeting". When I finish a step, I might note the action in the task note and I'll update the description to state the subsequent step. GTD'ers will probably throw their hands up in horror at this, but it works for me because it keeps my notes together, on the steps taken to complete.
