Follow-up Comment #4:
Confirmed here: brushes/classic/knife.myb has its change_color_h set to 0.02.
Quick fix is to change it back to 0.0 in the brush editor and save a personal
copy :)
This setting seems fairly arbitrary, and arguably standard brushes shouldn't
do this in a linear way at all. None of the other classic brushes do...
