ALWAYS PERFECT MEATLOAF
2 Lbs. ground beef
1 can evaporated milk (14 oz).
1 package onion soup mix
1 egg

Preheat oven to 350 degrees. Mix all ingredients in a large bowl.
Consistency will be thin. Pour into a loaf pan. I put 2 or 3 pieces
of loaf bread in the bottom of the pan to help soak up the grease.
Bake 1 to 1/2 hours.

Lemon Chiffon Dessert
1 pkg. Betty Crocker 1-step angel food cake mix
2 cups boiling water
1 pkg (8 serving size) lemon Jell-O
1-6 oz can lemonade concentrate, thawed
1 1/2 cups heavy whipping cream

Bake and cool cake as directed, or cheat like I did and buy an angel
food cake already made at the store.

Pour boiling water on gelatin in a large bowl.; stir until gelatin is
dissolved. Refrigerate until jello is thickened but not set. Add
enough cold water to lemonade concentrate to measure 2 cups; stir
into gelatin. Beat with an electric mixer until foamy. Beat whipping
cream in chilled medium bowl on high speed until stiff; fold into
gelatin.

Tear cake into 1 inch pieces. Fold cake pieces into gelatin mixture.
Spread in ungreased 9 x 13 rectangular baking dish. Cover and
refrigerate at least 4 hours until firm but no longer than 24 hours.
Cut into squares and serve.

Substitutions: orange Jell-O and orange juice, lime Jell-O and
limeade, strawberry Jell-O and daiquiri mix ?
