Nancy ================= Peach Muffins, makes 12 muffins 1 egg, beaten 1/4 cup butter, melted 2/3 cup sugar 1/2 teaspoon salt 1/4 teaspoon cinnamon 1 cup milk 1 teaspoon lemon juice 1/4 teaspoon vanilla 2 cups flour 1 tablespoon baking powder 1 cup peeled peaches, diced Stir together first 8 ingredients. In a separate bowl, mix together flour and baking powder. Add to milk mixture and stir just until blended. Fold in peaches. Grease muffin tins and fill 2/3 full. Bake at 400 degrees F for 18 to 20 minutes. Banana Muffins, makes 15 to 18 muffins 1/2 cup margarine 1 cup sugar 2 eggs 3/4 cup ripe bananas, mashed 1-1/4 cups flour 1/2 teaspoon salt 3/4 teaspoon baking soda 1-1/2 cups pecans Cream margarine. Add sugar and eggs; beat. Stir in mashed bananas. Add sifted dry ingredients. Add nuts. Fill paper liners in muffin pan three-quarters full. Bake 20 to 25 minutes in a 350 degree F oven. Banana Split Muffins 1-1/2 cups flour 1 cup sugar 1 teaspoon baking soda 1 teaspoon salt 1 egg 1/2 cup mayonnaise 3 ripe bananas Chocolate chips Chopped pecans Cherries In bowl, mix flour, sugar, baking soda and salt. In another bowl, combine egg and mayonnaise and mix well. Add flour mixture and mashed bananas; mix well. Pour into muffin tins and spread chips and pecans on each one. Bake 20 to 25 minutes at 375 degrees F. Remove from oven and add cherries immediately on top. Corinne, Murrieta, CA === Hello, Nancy, Below is, I think, the cooky than Shirley in VA asked about in the 9/27/05 newsletter. I found it in the 1963 Betty Crocker Cooky Book. This recipe became popular in 1940-1945, during the war. This cooky recipe was not listed on the 4 pages with the other refrigerator cookies. This just may be the one! Caramel Refrigerator Cookies 1/2 c. shortening - part butter or margarine 1 c. brown sugar, packed 1 egg 1/2 tsp. vanilla 1 3/4 c. Gold Medal Flour 1/2 tsp. soda 1/4 tsp. salt Mix shortening, sugar, egg and vanilla thoroughly. Measure flour by dipping method, or by sifting. Stir flour, soda and salt togeter; stir in. Form in roll 2-1/2" across. Wrap in waxed paper. Chill until firm. Heat oven to 400ºF - moderately hot -. Cut in 1/8" slices. Place slices a little apart on ungreased baking sheet. Bake 8 - 10 minutes, or until lightly browned. Makes about 5 doz. cookies. If you use Gold Medal Self-Rising flour, omit soda and salt.
