Haven't made this in many years. We used to have gooseberry bushes when I was a girl. >From Merry M in MN Gooseberry Pie 3 &1/2 cups gooseberries 2 Tablespoons minute tapioca 1& 1/2 cups sugar 1/4 teaspoon salt 1 teaspoon grated rind of orange 2 Tablespoons melted butter Mix ingredients together and let stand 15 minutes. Line 9-inch pie tin with pie crust. Fill with fruit mixture. Place top crust over filling and seal. Flute edges & slit in several spots to allow steam to escape. Sprinkle top with sugar. Bake in hot oven, 450° F. for15 minutes and then decrease to moderate, 350° F. and bake 30 minutes longer, until crust is golden. === For Debbie in SC in 8/7/05 newsletter: Debbie here are a few more easy recipes. Sorry I don't have a variety of them to choose from but my men (DH & son) only like a few different kinds of meat. chicken, pork chops & ground beef. PORK CHOP & STUFFING BAKE 4 C. boxed cornbread stuffing mix (I use Stove Top) 6 boneless pork chops 1 can cream of celery soup 1/3 C. milk Preheat oven 400 degrees. Prepare stuffing according to directions. Spoon stuffing across center of 3 qt. baking dish. Place chops on each side of stuffing. Mix soup & milk, pour over chops, cover. Bake 30-35 minutes. Sprinkle with cheese if desired. BAKED COCONUT CHICKEN 4 boneless chicken breast 3/4 C. cream of coconut 2 Tbs. soy sauce Hot cooked rice Preheat oven 350 degrees. Spray 13 x 9 baking dish then arrange chicken in dish. Combine cream of coconut & soy sauce and pour over chicken. Bake 45 minutes or until tender, basting every now & then with sauce. Serve with rice. Refrigerate leftovers. *Boneless pork chops may be substituted for chicken. TWO STEP GARLIC PORK CHOPS 1 Tbs. vegetable oil 4 boneless pork chops 1 can (10 3/4 oz.) cream of mushroom soup with roasted garlic flavor 1/2 C. milk Heat oil in skillet. Add chops & cook until browned. Add soup & milk. Heat to a boil. Cover & cook over low heat 10 minutes or until no longer pink in center. Serve with rice if desired.
