Special Spinach Salad (the homemade dressing makes this salad!) 
1 package fresh spinach, rinsed well
1 small sweet onion, sliced tissue thin
1 can mandarin oranges, drained
2 bananas, sliced
6-8 slices bacon, fried and crumbled, garnish

Dressing:
3/4 cup sugar
1/2 cup salad oil
1/3 cup vinegar
1 teaspoon dry mustard
1 teaspoon salt
1 teaspoon celery salt
1 small onion, chopped

Add onion and oranges to spinach. Right before serving, add bananas 
and toss lightly. Put dressing ingredients in blender and blend until 
smooth. Garnish with crumbled bacon.

CHICKEN TAMALE CASSEROLE 
2 chicken breasts
5 lg. frozen tamales
1 to 2 green peppers
1/2 med. onion, diced
1 can cream of chicken soup
8 oz. pkg. sour cream
2 tbsp. chili powder
1 sm. can pitted black olives
2 c. grated cheese

Cook, skin and bone chicken breasts and cut them into bite size 
pieces. Defrost tamales and cut into bite size pieces. Cut green 
pepper into strips and sauté briefly with diced onions in 1 
tablespoon of butter until crisp cooked. Place chicken and tamales in 
bottom of 9 x 13 inch casserole soup and sour cream and chili powder. 
Top with grated cheese. Bake 350 degrees for 45 minutes. Serves six.

Easy Orange Scones 
3 cups Bisquick
1/2 cup orange marmalade
1/2 cup raisins-optional
1/2 tsp cinnamon
1/4 tsp nutmeg
2 eggs
1 Tbsp orange juice
1 egg-beaten

Mix all ingredients except beaten egg until moist. Turn dough out 
onto a floured board and sprinkle lightly with flour. Roll dough into 
a 9" circle. Cut into 12 wedges using a floured knife. Brush with 
beaten egg a sprinkle of sugar. Alternate wedges-wide end to point 
ends on an ungreased baking sheet. Bake 400 degrees 12-14 minutes or 
brown.
