Nancy ================= Breaded Pork Chops 1/2 cup Bisquick Original or Reduced Fat Baking Mix 12 saltine crackers, crushed (1/2 cup) 1 teaspoon seasoned salt 1/4 teaspoon pepper 1 egg 2 tablespoons water 8 pork boneless loin chops, 1/2 inch thick (about 2 pounds) Mix baking mix, cracker crumbs, seasoned salt and pepper. Mix egg and water. Dip pork into egg mixture, then coat with baking mix mixture. Spray 12-inch nonstick skillet with cooking spray; heat over medium-high heat. Cook pork in skillet 8-10 minutes, turning once until pork is slightly pink in center. It is important for staff and volunteers to know that they are valued. It doesn't take much to express that you realize and appreciate the things that they do. There are a lot of different ways to get the message across to them, and not all of them are expensive. Store bought cards are nice, but personal hand written notes can mean a lot more. Purchased gifts are nice as well, but using your imagination and creativity can make a gift more special. For example: Attach a small note that says, thanks for planting seeds of kindness to a package of flower seeds. Attach a note that says, thanks for helping in "raisin" our children to a box of raisins. Attach a note saying, we would go nuts without you to a bag of nuts! Or you could make a note that says we mint to say thanks and attach it to a roll of lifesaver mints. Also, you could make a note that says, you light up so many lives and tie it onto a small votive candle. The list is endless, if you just use your imagination, you will be surprised at all the catchy sayings and cute ideas that you can come up with. Banquets and luncheons are nice as well, and would be an ideal thing to do at the end of the school year to show appreciation for everyone. Making it pot luck is fun but also helps to cut down on the cost of providing food for a large group. You could even give the luncheon a theme and have everyone bring dishes that relate to the theme. Plaques and certificates are also another idea that you can use to show appreciation. This way, the staff member or volunteer has something to keep to remember the time spent at your center. KG === I made this Saturday night and it turned out wonderful. Bake And Baste Chicken 1/4 c oil 1 T Honey 1 T Lime juice 1/4 tsp. Paprika 4 Chicken breast halves, washed and patted dry In a small bowl, combine oil, honey, lime juice and paprika. Place chicken, skin side up, in a single layer in 7-inch by 11 inch baking dish. Spread with some of oil mixture. Bake in a preheated 400 F oven 35 to 40 minutes, basting every 8 to 10 minutes with remaining oil mixture, or until well browned and juices run clear when thickest part of chicken is cut. Remove from oven. Cover with foil and let stand 15 minutes. This softens chicken and keeps it hot until served. Makes 4 servings.
