Jiffy Scalloped Corn Casserole
2 eggs
1 14 oz. can creamed corn
1 14 oz can whole kernel corn (undrained)
1 cup sour cream
1 box Jjiffy cornbread mix
1/2 cup melted butter
1 or 2 tbl. sugar*
1 cup shredded cheddar cheese
Beat eggs slightly. Add sour cream, butter and corn. Fold in dry Jiffy corn mix and sugar.
Pour into a greased (I use a butter flavored spray) 9 x 7 baking dish.
Sprinkle cheese on top. Bake at 350 for 45-60 minutes. Make sure center comes out clean.
*(The sugar is optional. I add it because we like this dish to be sweet.)

Pecan Praline Morsels
Makes 2 cups
2 cups whole pecan halves
1/2 cup packed light brown sugar
4 tablespoons heavy whipping cream
In a medium bowl, combine all ingredients. Spread into a square baking pan that has been sprayed with cooking spray. Bake in a preheated 350
degree oven for 10 minutes. Stir and return to oven and bake for another 10 minutes. Remove pan from oven, stir again and turn out onto a cookie
sheet sprayed with cooking spray. Spread out to cool thoroughly. Store in an airtight container.

Cranberry Pumpkin Cake Turkey Candy
CRANBERRY-ORANGE SALAD
2 golden delicious apples
2 navel oranges
1 (12 oz) pkg fresh cranberries
1 to 1 1/2 cups granulated sugar (to taste)
Wash the apples, oranges and cranberries and drain well. DO NOT peel the apples or oranges. Core the apples and cut into 6 or 8 chunks. Remove the navel and stem end from the oranges and cut in half, then remove the center membrane from the center. Cut the oranges into 6 or 8 chunks each. Place the apple and orange pieces and cranberries in a food processor or food grinder and process to a small size dice. Put the fruit mixture into a mixing bowl, add the sugar and mix until thoroughly blended. Cover and refrigerate for at least 24 hours before serving. Yield: 6 servings.
