Slow Cooker Pumpkin Pie Pudding
15-oz. can of solid pack pumpkin
12-oz. can evaporated milk
3/4 cup sugar
1/2 cup buttermilk baking mix (such as Jiffy or Krusteaz brands)
2 eggs beaten
2 tablespoons melted butter
1 tablespoon pumpkin pie spice
2 teaspoons vanilla extract
Whipped Cream or Cool Whip

Mix together all ingredients except the whipped cream or cool whip. Pour into a greased slow cooker. Cover and cook on low 6-7 hours. Serve topped with whipped cream or cool whip

Black Walnut Pie (Original)
3 eggs, lightly beaten
1 T. lemon juice
1 C. light corn syrup
1 t. vanilla
1 C. dark brown sugar
2 1/2 C. black walnuts
1/4 C. butter, melted
1 unbaked pie crust (9 inches) can use Graham cracker crust & was topped with whipped cream.

Preheat oven to 350°F.

Gently combine all ingredients in order listed. Stir enough to begin dissolving the sugar, but not enough to incorporate air into the filling. Do not beat the filling or the pie will have air bubbles on the top, instead of black walnuts. Pour filling into the crust.

Place on a cookie sheet and bake for 60 minutes or until the center of the pie is no longer loose and black walnuts are browned. Serve either, hot, cold or at room temperature.

Country Pork and Kraut Supper
6 pork chops, 1/2 inch thick
2 T. oil
1 medium onion, sliced and separated into rings
2 (16 oz.) cans sauerkraut, drained
2 red apples, peeled and sliced into wedges
2 T. brown sugar
1-1/2 C. apple juice
1/8 tsp. pepper
paprika

Heat oven to 350 degrees. In a large skillet, brown pork chops in oil; remove from skillet. Saute onion in drippings until tender. In ungreased 13x9 (3 qt.) baking dish, combine sauerkraut, apples, brown sugar, apple juice and cooked onions. Place pork in sauerkraut mixture; sprinkle with pepper and paprika. Cover with foil. Bake at 350 degrees for 1 1/2 hours or until meat is tender.,

Of course you have to have garlic mashed potatoes with this. I substitute pork loin for the pork chops a lot of the time,
