You are better off with the enamel one. Stainless will taint your brew, IMHO. There is also a new, sort of ceramic cookware. Not Corning, but similar. Heats well, holds heat, and easy to clean, even if you burn something in them. I know; I burned some chicken when I was making a chicken spaghetti sauce. It takes a lot less heat to cook with that stuff. Doesn't add anything to what you're cooking - like iron, nickel, aluminum, or teflon, etc. Stanley
