Engine braking is like anything else, don't do too much of it on unstable surfaces. Luckily I haven't gone down on a street bike in gravel, just dirt bikes as a kid. I had a friend go down 2 yrs ago though. Twisty hilly country road that he didn't know, one turn had gravel in it and he broke his leg and collarbone. His advice is to pretend every turn has gravel until you know otherwise. I've had my bike on sandy beach roads and washboard rutted gravel and dirt forest roads. I can tell you that it doesn't like either but if you pay attention you can keep it upright. If there's a gravel parking lot near you you may want to go practice in a controlled environment until get a feel for unstable surfaces.
