Have you ever rode a V-twin cruiser? The power of those bikes will be a let
down compared to your 700S, so will the handling.

Or would I end up happier with this bike?

Just to let you know I have only road a 85 nighthawk 700 and the bike
that I took my endorsment test and learner class was a 250 something
or other I wasn't paying attention to make and model. I have now been
riding a year with almost 9000 miles under my belt. I love the
nighthawk and have two 85 700's looking at trading one in both are
complete but fair condition as in paint and dings and scrapes.
